Forks, Knives and Spoons

All utensils must be protected from contamination.  Depending on your operation, you may want to wrap the utensils in linen (or paper) before placing them on the table.  You may want to place the utensils on the table after guests are seated.  You can also use pre-wrapped single-use utensils (i.e. plastic, disposable wood or even bamboo) that are discarded or recycled when they have been used.  Employees must wash their hands and wear gloves before handling utensils.
